Smoked Herring Salad
Sometimes the simple, unplanned recipes are amongst the tastiest of all. When a friend surprised me with some fresh, doughy @bellesbagels from my home neighborhood of Highland Park, I quickly cracked a tin of naturally smoked herring sent to me from @marymanetteseafood and folded in some of their new (and utterly chuggable) lemon horseradish sauce along with a handful of other easy ingredients I had on hand. Smokey, creamy, flaky, and lemony, with just a kiss of heat, I prawnmise, you canned go wrong with this one.

• 1 tin @marymanetteseafood naturally smoked herring
• 2 tbs @marymanetteseafood lemon horseradish sauce
• 1 fresh bagel (I used poppy seed)
• 2 oz plain cream cheese
• 1 green onion, split, medium chop
• ½ tbs lemon juice + more to taste
• Kosher salt & black pepper to taste
• ½ tbs fresh herbs, chopped (I used flat-leaf parsley)
• Chili oil for finishing
• Smoked @maldonsalt for finishing

1. Open the tin and drain out the liquid (pro-tip: save liquid for later to make salad dressing!). Empty contints into a medium bowl and flake with fork.
2. Add all the ingredients except the chili oil, herbs, and Maldon and mix to combine well. Taste and add more seasoning or lemon if needed.
3. Spread generously on bagel halves and plate, finishing with parsley, chili oil, and smoked Maldon.
