Smoked Trout Red Lentil Soup

While I tend to share my most shellevated recipes here, there are many simple, weekly recipes I love to cook that are equally deserving of dishcussion. The truth is, cooking with tinned seafood does not need to be fancy or complicated to be delicious. Case in point: this smokey, lentil soup, made from just a handful of tinexpensive ingredients, all readily available from @traderjoes. The whole thing comes together in 3 minutes flat and is so tasty you might as well put it on your calendar as a standing Thursday treat.

  • 1 box @traderjoes organic lentil vegetable soup

  • 1 tin Trader Joe’s smoked trout, drained of oil

  • ¼ cup @traderjoes organic corn chips

  • 1 green onion

  • EVOO to taste

  • Sriracha to taste

Empty soup contents into microwave safe bowl. Add fish and mash up with fork, stirring to incorporate into the soup. Cover and microwave on high for 2 minutes or heat over stovetop. 

While soup cooks, split the green onion length-wise and finely chop. Gently crush the chips into bit-size bits.

When soup is done heating uncover and drizzle on EVOO and sriracha if desired. Add chips and green onion. Enjoy!
